Brutal Pie is a mobile pizzeria built in an old school bus, making 100% sourdough pizza in and around Grand Junction, Colorado. A passion project of a lifelong pizzaiolo, our focus is on the craft. Utilizing natural leavening and cold fermentation for extended periods of time, we are able to create a pizza that is as delicious as it is easy on the stomach. Our methods create a dough that has less gluten remaining, and has been consumed by those with an intolerance to gluten without the adverse effects they are used to from commercially yeasted breads.
