We opened for business in the spring of 2021 and offer foods inspired by places we lived in New Mexico and Colorado, the Grateful Dead parking lot, restaurants we worked in, and Iowa family recipes. We wanted to have something for everyone, so we sell creative smoked meat sandwiches, vegetarian and vegan wraps and Frito Pie, garden-fresh sides, and gluten-free options. Everything is made from scratch, and we grow some of the produce in our organic garden and buy from local farmers when possible. Peggy-O's (named after a Grateful Dead song that was playing when we met) serves at breweries, festivals, farmers markets, corporate lunches, graduation parties, and other private events.
